Primal Brisket (Flat)
The Primal Brisket, one of our most sought after products, was formerly reserved for locals and our restaurant partners. We now offer this outstanding cut to the public and in 3 different cuts: whole (untrimmed), the point, and the flat!
The brisket flat is often referred to as the “lean” part of the brisket as this has the "deckle", or the fatty part of the brisket, removed. If you walk into a barbecue restaurant that serves brisket, you will more than likely see “lean” as one of your two choices for ordering.
With less fat than its other half, the point, you’ll have a fantastically and perfectly grained, break-apart or knife-and-fork flavorful experience to share with friends and family.
