How to Smoke & Braise A Chuck Roast

Tender Smoked & Braised Chuck Roast 

We've added a little ranch twist to this hearty American family classic!

**NOTE: Though we used a chuck roast in this recipe/video, any roast will work the same in it's place.**

Prep Time: 15 Minutes

Cook Time: 6 Hours

Difficulty: 2.5 out of 5 

Ingredients:

  • 3-4 lb Chuck Roast (any roast)
  • 5 small red bliss potatoes, halved (2 cups)
  • 7 Full Carrots, cut into 2-inch slices (2 cups)
  • 1 large pearl onion, peeled (2 cups)
  • 2 cups beef stock

STEP 1: Allow Chuck Roast (3-4lbs) to come to room temperature. Season: S&P is all that is needed. Can add Garlic Powder and Onion Powder.

 

STEP 2: When ready to cook set smoker to 225°F and smoke for 1-1.5 hours.

 

STEP 3: Transfer smoked Chuck Roast to Dutch oven (or our favorite is the Lodge Cast Iron Covered Deep Skillet) and add halved potatoes, cut carrots, peeled onion and beef stock.

 

STEP 4: Place lid on Dutch Oven or large cast iron deep skillet. Braise roast for 4-5 hours at 275F (in smoker or oven) or until meat is very tender.

 

STEP 5: Serve with your favorite roasted vegetables or mashed potatoes and gravy! Enjoy!

SUPER EASY ALTERNATIVE:

Combine roast and all ingredients in your slow cooker in the morning before you head to work, set on low, and come home to the perfect family comfort meal at the end of the day!
